Roms are just a different version of the operating system. Some look different with different colors and textures. Some look the same but are tweaked with different mods making them more functional. Some are debloated and streamlined for speed. You just have to try some on and see what fits you best.

Hedney recommends Stock ROM.
The way I can explain it is ROMs are the equivalent to Windows. You have different ROMs just like different Windows (Windows 7, Vista, Windows XP). It is what operates the phone. You can leave your phone stock with no custom rom on it and you will be fine. But many put custom roms on their phones so that they can run themes and enhance performance.
